The new menu, unveiled in July, redefines the restaurant’s concept as ‘bistronomic’, combining the laid-back bistro style with gourmet culinary excellence. The inspiration behind this new approach from Sandeep Daby and his team was drawn from a variety of cultural horizons.   Inspired by local products: bringing back the glory days of lesser-known produce This inspiration comes from a host of influences, including local traditions and the latest culinary trends favoring healthy yet tasty cuisine. Chef Nitish DEEHUL of L’Atelier has revisited the menu with innovative ideas fused with Mauritian flavors. Local traditions also play a crucial role, with a focus on the island’s typical recipes and ingredients, which are often forgotten or underused. And the result is mouth-watering dishes, bursting with color and unique flavors! A key difference to the former menu is a shift towards a more trendy cuisine, focused on health and well-being. One of the chef’s aims has been to explore new ways of rediscovering forgotten local products, such as breadfruit, often home-cooked but seldom served in restaurants. The idea is to surprise not only foreign visitors but also Mauritians with a taste for gourmet cuisine.  Finally, current trends in sustainability have been incorporated, with an emphasis on using fresh produce from local suppliers. These local suppliers are given priority, guaranteeing a short supply chain and products of the highest possible quality. L’Atelier’s kitchen garden is currently being redeveloped.    Experience an exceptional culinary change of scenery Another change has been made to the way the dishes are displayed. Particular attention has been paid to the aesthetics on plates, using new crockery to highlight the colors and flavors of the ingredients and give an enhanced dining experience.  The new menu’s inspiration is to offer a unique gastronomic experience that respects and enhances products while innovating. Surprise and seduce: a challenge successfully met by the Atelier team! The dishes are all homemade, highlighting the traditional flavors of Mauritius. For example, the starters include shrimps in a scorching crust with okra and tomato salsa with combava, and Cajun crab cake with green papaya salad and pumpkin mousseline with mustard. Each dish is designed to captivate guests’ taste buds and ensure an unforgettable culinary journey.   A la carte signature dishes Our menu update at L’Atelier does more than just add new dishes. It represents a full overhaul of our customers’ dining experience. New signature dishes promise to make a difference. The new menu features signature dishes that stand out for their creativity and innovation. Local, neglected or rare ingredients are used to surprise guests. For instance, sea bream filet crusted with moringa, served with sweet potato gratin and glazed carrots, is a perfect example of this approach. As part of these changes, staff have also been given special training to ensure they are fully familiar with the new dishes and related serving skills.  Feedback from customers is constantly sought to improve the overall experience. As with any exotic country, water and food require special attention. Sea currents can be strong on some beaches in Mauritius, which can make swimming dangerous, especially for inexperienced swimmers. Marine life can also be hazardous. Stonefish, jellyfish and coral can cause serious injury if touched. Animals and insects such as snakes and spiders are not dangerous on the island. However, outdoor activities such as hiking in nature parks should also be undertaken with caution, as the paths can be slippery and weather conditions can change rapidly. So be prepared for any adventure activities. Poverty, rooted in this heavenly setting, can lead to a certain form of criminality.Water and food There are potential food and water hazards for unwary travellers. Tap water, although treated, is not always recommended for direct consumption due to variations in the quality of the supply. Although no vaccinations (such as yellow fever or typhoid) are required, travelers should ensure that they are up to date with common vaccinations such as tetanus. As far as local diseases are concerned, dengue fever is prevalent on the island. To protect yourself, it is essential to use mosquito repellent, wear long-sleeved clothing and stay in air-conditioned or mosquito-screened accommodation. Climate hazards Mauritius is regularly confronted with a series of climatic hazards, including the cyclone season, which runs from November to April. People living in poverty have poorer access to quality healthcare and adequate education, and are more exposed to criminal activity which is an alarming situation for the country. Drugs are widespread and lead to opportunistic delinquency. Travel light, without expensive jewelry or watches, and do not leave your belongings unattended on the beach if you are going swimming. Hotels and residences are equipped with cameras and offer a permanent security service.  How to protect yourself from some of the hazards Mauritius is a tropical paradise, but like anywhere else, there are risks to be aware of. First of all, safety at sea is paramount. Make sure you keep to the safety flags on the beaches. Avoid strong currents and beware of jellyfish and stonefish. Do not touch the corals, as they are fragile and can cause injury. When hiking, take water and food with you, and let someone else know where you’re heading. Avoid leaving valuables in your vehicle to prevent theft. Finally, keep an eye on your personal belongings and avoid venturing into poorly lit areas at night.
